Popsicles are a go-to in Forever Summer Land, and should be in your home too! Make these smoothie popsicles, or any combination of fruits and veggies, in the blender for a healthy afternoon snack.
This method allows you to retain the fiber from the whole fruit itself, which is great as kids need preferably more than 14 grams of fiber per day. Watermelon provides potassium and magnesium to help restore electrolytes after a fun day in the sun, while strawberries and kiwis are excellent sources of vitamin C.
Ingredients:
- 1 medium lime
- 1 medium kiwi
- 2 cups of watermelon
- 1 cup of strawberries (Frozen berries also work fine.)
Juice and zest the lime. Peel kiwi. Dice watermelon and hull and slice strawberries.
Place all ingredients in a blender and puree until smooth.
Pour mixture into Popsicle molds.
Freeze at least 3-4 hours, or until solid.
Beware the Brain Freeze.
